Dining at CoreLife Eatery

With the healthy craze in full swing, it's about time the restaurants responded. If you're one of those trying to eat healthier and possibly adding protein to your diet, you'll definitely want to check out CoreLife Eatery.

Would you believe Utah has the only two stores of this chain east of the Mississippi River? I was lucky enough to visit the one in American Fork.

The ordering process allows you to use your creativity on what you want to include and/or add to the suggested selections. As usual, I simply ask what's popular and go for that. Since I always lean to salads, I chose the Steak, Bacon and Blue Cheese Bowl. Topped with the Cranberry Vinaigrette, it is scrumptious. My daughter chose the Caesar Kale salad. It was equally as tasty.

They have broth bowls, which it took me a while to realize it is a fancy way of saying soup, as well as power bowls and grain bowls. I haven't delved into those yet.

You will have to try the variations of the lemonade they offer. My favorite was the cranberry lemonade, although I saw a lot of people going for the honey lemonade. It is a nice change from the carbonated soda machine. Although, I'm easy to please with a diet coke, but I guess I should refrain occasionally.

The best part? I loved the feeling of walking out of the store, though, not feeling overstuffed or guilty for consuming too many calories.

You'll have to let me know what you think when you give this restaurant a try.
