Almond Joy Protein Balls

These are seriously my favorite protein balls ever. I have tried a number of different recipes, but I always come back to this one. I usually double the recipe and freeze all of them in a freezer bag so I can open them and grab a few at a time. My boys love them, too.

I recently started putting them into these silicone molds to form them. It has made it a lot easier.

ALMOND JOY POWERBALLS


DRY INGREDIENTS:


· 1 1/2 cups old fashion oats slightly broken down in the blender

· 1/2 cup toasted unsweetened coconut (don’t skip toasting it)

· 1 scoop chocolate protein powder

· 2 T cocoa powder

· 2 T chopped almonds


WET INGREDIENTS


· 1 cup almond butter

· 1/2 cup raw honey

· 2 T coconut milk

· 1 1/2 tbsp coconut oil melted

· 1 tsp almond extract

· 1/2 tsp vanilla extract

· 1/4 tsp sea salt


INSTRUCTIONS

1. Combine all dry ingredients in your mixer.

2. Mix on low until ingredients are well blended.

3. Add wet ingredients to blended dry ingredients.

4. Mix on medium speed until a dough forms.

5. Scrape sides of bowl with a spatula and mix again if needed.

6. Form into balls or place into silicone molds.

7. Set balls on a parchment lined cookie sheet and put in freezer. After an hour, place the balls into freezer bags to grab individually at your convenience.
