The best Belgian Waffle Recipe

I found this recipe in a magazine many years ago from a bed and breakfast in the Northeast. We tried it once and have never looked back:
Combine in a medium bowl:
2 1/2 c. all purpose flour
2 T sugar
1 t. salt
In a separate bowl combine and let set five minutes until yeast dissolves:
1 pkg. dry yeast
2 c. warm milk
Stir into yeast mixture until blended:
4 large egg yolks, lightly beaten
1 tsp. vanilla
Stir all the wet and dry ingredients together until smooth, then stir in 1/2 c. melted butter.
With rubber spatula, gently fold in 4 lg. egg whites beaten until stiff.
Cover and let stand in a warm, draft-free place for 45 minutes or so.
Once risen, place in a heated Belgian Waffle iron.
Makes 8 servings.
